My thoughts-

I liked that this book was gluten free and dairy free because my daughter can't have gluten and her best friend (that happens to be my best friend's daughter so we are together a lot) has an allergy to dairy so it is handy to have a book that addresses both of their special food needs. Beyond that, the recipes all sound delicious. I especially love the section at the end of the book with the different bread and pastry recipes. The desserts also are notable for the different flavor options, particularly the raspberry and rosewater cupcakes. There are lots of great options to be found here whether you are gluten free, dairy free or both.

My thoughts-

It is rare that I come across a cookbook that has filled the entire book with recipes that everyone in my family will love, that I approve of, and that I don't have to tweak to fit our health requirements. I love that so many popular and tasty recipes are included in this cookbook, including an entire section of Asian food favorites, a very popular choice in our household. I also love that all of these recipes are for the Instant Pot, which is, aside from my Kitchenaid Stand Mixer, my favorite Kitchen tool. There is a wide variety of food options from every category, including some fabulous desserts that I can't wait to try! I also love that they include recommendations for brands of pre-packaged foods that are used in the recipes that are gluten free to take out the guess work. I recommend this book to anyone following a gluten free diet.

My thoughts-

Eating gluten free was a piece of the puzzle I figured out for my family a while back, mainly due to my daughter's behavioral problems getting so much better when she doesn't have gluten in her system. We are still working on being 100% gluten free, so reading books like these help me on that journey and help cement the idea that we are on the right path.  I love books like The Grain Brain Whole Life Plan that offer science to back up statements. I also like that this book isn't just about eating habits. It is about the bigger picture. Stress, sleep, exercise, and supplements that will help lead to optimal health are all discussed here. There are also many great recipes to get you started. I read a lot of books about diet and lifestyle and I think each one offers at least a little bit of good advice on how to become healthier or start down a healthier road, but I feel like The Grain Brain Whole Life Plan is a great place to start and may be the only book necessary to begin a journey to better health.

My thoughts-

My family has recently made the switch to a gluten free lifestyle to support the way my daughter needs to eat. I figured it would help us all maintain a healthier gut so we might as well all eat gluten free. I have dabbled in gluten free fare off and on for a few years but never dove completely in until now, so it is nice to have a book like Gluten Free For Good with a great introduction for how to go completely gluten free. I liked that there is a section at the beginning that breaks down the things you need to stock your pantry with and the equally as important break down of all of the different types of flour that a gluten free pantry might need to utilize. There are great recipes in all of the usual types of categories and I love that they are all colorful and healthy choices. My only complaint would be the lack of pictures. While there are some pictures of a few dishes, I am the type of person that does better when I have a visual aid, so I love having a picture of each recipe in my cookbooks. That alone wouldn't keep me from recommending this book as I think it is full of great information and good eats and I think it will really help us go gluten free for good.

My thoughts-

The Trim Healthy Mama way of eating is quite popular among my circle of friends. I always see Facebook posts mentioning it and while I got the general gist of things ( sugar free, refined grain free, lots of clean eating) I never read the original book. I was happy to find an overview at the beginning of the book written for someone like me who hadn't read the original book or for someone who needed a refresher course. The Trim Healthy Mama Cookbook offers a wide variety of healthy yet tasty recipes ready to satisfy the palette while also feeling up your belly. I love that there are a wide variety of offerings to make sure there is truly something for everyone. I don't think I really noticed a recipe in the book that I wouldn't try at least once. I also love that although this book is about keeping healthy and trim, there is a section on indulgences at the end. The desserts are modified using sweeteners like stevia and they all sound delicious. I can't wait to test some of them out. I recommend this book to any woman trying to eat right and feel great about her choices. It's called Trim Healthy Mama, but this book is for everyone from all walks of life. I am definitely glad I picked this one up. I know it will get a great deal of use in my kitchen!

Gluten-Free Family Favorites by Kelli Bronski and Peter Bronski (Cookbook Review)

I am constantly on the look out for recipe books with a focus on gluten free dishes. We have been experimenting with a gluten free diet this year because my daughter seems to have a sensitivity to it linked with some behavioral issues. She is a totally different kid when she has not had anything containing gluten and when she accidentally gets a hold of something, man, I remember why we started down this road. Some gluten free cookbooks are full of specialty ingredients and while I have some on hand and don't mind getting a few here and there, I do not want to have to totally overhaul everything. One of the nice things about this book is that it doesn't call for many specialty ingredients, making it a more doable cookbook for most people to work with what. The main thing I liked about this book is that even those these are kid friendly recipes, they all sound pretty fantastic. We have tried several and have not been disappointed yet. This is not all chicken nuggets and hamburgers, but there is a good mix of lots of different types of recipes, which is great for my family, we love to experiment with new dishes, but for those who like to stick to the same rotation of meals, there are some in here that you could definitely add to your meal plan (chicken fried rice or turkey burgers anyone?) There are great recipes for every meal of the day as well as some awesome recipes for snacks that I can not wait to try out, especially since the summer months are upon us and my kids will be home and hungry in the middle of the day.

Besides tasty, easy to make recipes, I really like this cookbook because each recipe also suggests things that children can do to help prepare the meal. My kids all like to be in the kitchen and help prepare dinner and I think it is a great way to get them involved and more excited about what we are going to eat.

Even if you don't eat gluten free, I would still suggest checking out this book for some fantastic, healthy recipes!

My thoughts:
I have mentioned before on another post about a cookbook, this year my daughter started Kindergarten and seems to have some attention problems. I did some research because I didn't want medicating her to be the first resolution we tried and I found out that people with gluten sensitivities can have attention and behavior problems. So, we set out to remove gluten fro her diet. Problem is, gluten is in so much stuff it is impossible to know where to begin ad what to remove. Gluten-Free, Hassle Free is a great place to start for anyone looking to remove gluten from their diet. This is an amazing resources for avoiding gluten. It covers every subject you cold possibly think of- everything from what foods do have gluten and what foods are safe to eat, how to avoid gluten restaurants, how to entertain gluten free and so much more. There are extensive charts that you could bring with you to the grocery store that list all of the safe foods to eat and all of the foods to avoid. Throughout all of this wonderful information contained in this informative book, there are tons of gluten-free recipes for you to try. There are so many tasty recipes to try. Some standouts include: artichoke cheese dip, cornmeal crusted chicken tenders, portabella mushroom burgers, chicken in vodka sauce with mushrooms, and chocolate dream tarts, There are even menu ideas for what to eat for breakfast, lunch and dinner. I would recommend this book to anyone that has someone with a gluten sensitivity or anyone that is just interested in eating more gluten free meals.

The 163 Best Paleo Slow Cooker Recipes by Judith Finlayson (Cookbook Review)

About the book:

I am sure by now you have at least heard of a "paleo" diet. The thought behind it is to eat as our ancestors would have, namely not consuming legumes, grains or refined sugars or oils. Nearly 1.5 million people in North America follow a paleo diet. This book is full of all 100% gluten free paleo recipes that are all prepared by using a slow cooker. Many people (myself included) like the convenience of using a slow cooker to make meals quickly that are still very healthy for you.


My thoughts:

My daughter started Kindergarten this year. She has never been in a school setting before now and as the first few months of school progressed, we were getting frustrated with all of the reports we were getting about her not sitting still or following directions. We are believers in the healing power of food and that the wrong types of food can be a detriment to us, so we knew right away that we would try to eliminate gluten from her diet to see if it might help some of the issues she was having. It only took a few weeks before we noticed a difference! The problem with trying to make gluten free food is that gluten free recipes can contain hard to find ingredients or take a long time to cook. I really liked the idea of slow cooker gluten free recipes, especially paleo recipes because our family knows the best way to eat is to avoid all processed foods and that is basically what a paleo diet does. We don't always do that, but we try our best, especially now. I was so excited to discover this paleo cookbook full of slow cooker recipes and was even more ecstatic to find that it was full of recipe after recipe that sounds delicious. There is a nice introduction at the beginning of the book that explains the ins and outs of eating paleo for someone who isn't familiar with it and there is also a section on slow cooker basics. After the intro chapters, there are several chapters on different types of food and as someone who does not like to eat a ton of meat (I only eat it at all because if I don't I stay super anemic) there is an entire chapter devoted to vegetarian dishes. There are, of course, several chapters on meat dishes and there is a chapter devoted to starters and snacks, another for soups, yet another for desserts and even a chapter about condiments and accompaniments.

I would like to highlight just a couple of the recipes in The 163 Best Paleo Slow Cooker Recipes so you can get just a tiny glimpse of what great recipes are featured in the book.


Mixed Vegetable Coconut Curry, page 196, vegan
Serves 8

This Dish is very versatile. Use it as a vegetable dish to round out an Indian meal, as a tasty side for grilled meat or fish, or increase the portion size and serve it as a main course if you’re serving vegetarians. (It is vegan friendly.)

  • Medium to large slow cooker
1 tbsp clarified butter (ghee) or extra virgin coconut oil
3 cups (1/2 inch) cubed peeled carrots (about 4 medium)
2 onions, finally chopped
2 stalks of celery, diced (see tips)
4 garlic cloves, minced
1 tbsp minced gingerroot
2 tsp cumin
2 tsp coriander
1 tsp cracked black peppercorns
1/2 tsp sea salt
1/2 tsp ground turmeric
1 bay leaf
1 can (28 oz) diced tomatoes with juice
4 cups cubed (1 inch) winter squash
1 cup coconut milk
1 red pepper, seeded and diced
1 long red or green chile pepper, seeded and minced

1. In skillet, heat clarified butter over medium heat. Add carrots, onions and celery and cook, stirring until softened, about 7 minutes. Add garlic, ginger, cumin, coriander, peppercorns, sea salt, turmeric and bay leaf and cook, stirring, for one minute. Add tomatoes with juice, and bring to a boil. Transfer to slow cooker stoneware.

2. Stir in squash. Cover and cook on Low for 6 hours or on High for 3 hours. Add coconut milk, bell pepper and chile pepper and stir well. Cover and cook on high for 15 minutes, until peppers are tender.

Tips

If you are halving this recipe, be sure to use a small (approx. 2 quart) slow cooker. For the best flavor, toast the cumin and coriander seeds and grind them yourself. To toast seeds: place in a dry skillet over medium heat and cook, stirring, until fragrant, about 3 minutes.  Immediately transfer to a spice grinder or mortar and grind finely. If you are using the outer stalks of celery, peel them before chopping; the top layer is very fibrous. The inner stalks (hearts) can be used without peeling.

Make ahead


Complete step 1. Cover and refrigerate for up to 2 days. When you're ready to cook, complete the recipe.

Chocolate Flan with Toasted Almonds, pg 230, desserts, entertaining, serves 6

Here's a deliciously decadent chocolate dessert. Save it for special occasions or treat yourself and enjoy. For a real treat, finish with a dollop of coconut whipped cream.

  • 6-cup lightly greased mold or souffle dish
  • Large (minimum 5 quart) slow cooker



Caramel
3/4 cup coconut sugar
1/3 cup water
1/4 cup toasted slivered almond

Flan
3 1/2 oz bittersweet chocolate, broken into pieces
1 can (10 oz) coconut milk
1/3 cup coconut sugar
2 eggs
2 egg yolks

1 Caramel: In a heavy-bottomed pot sauce pan over medium heat, bring coconut sugar and water to a boil, stirring until sugar dissolves. Cook without stirring until mixture is very syrupy, about 6 minutes. Pour into prepared dish until sides are well coated. Sprinkle almonds over bottom of dish and set aside;

2. Flan: In a heat-proof bowl, place chocolate. In a clean saucepan, bring coconut milk and sugar just to a boil, stirring until sugar dissolves. Pour over chocolate and stir until mixture is smooth and chocolate is melted.

 3. In a bowl, beat eggs and egg yolks. Gradually add chocolate mixture, beating constantly until incorporated. Pour into caramel-coated dish. Cover with foil and secure tightly. Place dish in slow cooker stoneware and add enough hot water to come one inch up the sides. Cover and cook on high for 2 hours, or until a knife inserted inside comes out clean. Remove and refrigerate 4 hours or overnight.

4. When ready to serve, remove foil. Run a sharp knife around the edge of the flan and invert onto a serving plate.

  • Entertaining Worthy
Tips

If you prefer, make this dessert in 6 individual tall ramekins or 4-6 ounce mason type jars. Just make sure your slow cooker is large enough to accommodate the vessels. Mason jars are particularly functional if you are transporting this dessert. Instead of covering the jars with foil, use the lids and screw tops. Add enough hot water to come half way up the sides of the jars and reduce the cooking time to about 1 1/2 hours.

Chloe's Vegan Desserts by Chloe Coscarelli Book Review


Before I even start this review, I need to mention that I am not vegan. I am working on hard on leaning more in that direction, but that has been difficult for me because of my love of cheese, but that doesn't have much to do with dessert does it? haha! So I thought "Well, I love dessert, I wonder if these recipes will be any good? I might as well give it a try!" And boy am I glad I did!

I have tried several recipes from this cookbook and they were all pretty knock your socks off amazing. And that is not just coming from me, my meat loving, kind of anti-vegan husband tried every recipe I created and thought they were awesome. He was especially impressed by the vegan brownie recipe! My favorite recipe I tried out of this book were for cupcakes with a sea salted caramel frosting. Those were so good, I decided I would send some to the Emergency Room for my husband's co-workers. They loved them! I bake for the ER quite often and one of my husband's good friends at work takes some home often for her 11 year old daughter. She said that these cupcakes were BY FAR her daughter's favorite dessert I have made. That says something about Chloe's talent as a vegan chef and about vegan baking in general. It is definitely possible to have delicious desserts without using dairy products or eggs. This recipe book is proof of that.

This is a huge win for people on a gluten free diet! This is probably my favorite recipe book I have had the pleasure of reviewing, traditional or vegan. Hands down, these are delicious recipes that even a person very skeptical of  the vegan diet will enjoy!

I will definitely be ordering a copy to add to my cookbook collection. I may not be vegan (yet), but I know a good cook when I see one. 500 Best Quinoa Recipes by Camilla V. Saulsbury- Cookbook review

Quinoa (pronounced KEEN-wah) has received a lot of attention in the last few years. People that want to add more healthy grains to their diet, or just have a different sort of flavor definitely want to try quinoa. It is known as one of nature's superfood powerhouses! I first discovered it on the shelf at my local Sprouts. By far the coolest thing about quinoa is it's versatility. You can use it for nearly anything from a replacement for rice to a gluten free flour for baked goods. It's flavor is a bit on the nutty side and it comes in several different forms- seeds, flakes or flour. Quinoa is a fantastic grain for vegans, vegetarian, flexitarians and anyone affected by a gluten intolerance.

Quinoa is popular for it's massive amounts of protein- it includes all of the essential amino acids humans need. It is also naturally gluten free, which makes it a great option for people with Celiac Disease or gluten or wheat sensitivities. Something that I find really interesting about quinoa is that it is being hailed as a food of the future- because of it's hardiness and high yield, it is being considered a possible relief crop for battling famine and malnutrition. This coupled along with the fact that it can be grown in almost any condition makes me think that it definitely might be a future key player in fighting hunger.

I have been using quinoa pretty regularly for the past year or so, but was getting kind of bored with my stand by recipes, so I was super excited to come across Camilla V Saulsbury's 500 Best Quinoa Recipes. There are recipes in every category imaginable and it is a great cookbook for quinoa lovers or novices alike. The beginning of the book is devoted to teaching about the different forms of quinoa and different things you can do with it. I love that this book came with some instruction because although quinoa has been a staple in my house for a while, I am always looking for new things to do in the kitchen, so the more I learn about quinoa's versatility the better for my family and the more variety that is in our menu.

We have tried several recipes out of this book over the past few weeks and have enjoyed most everything we have had! Here are some of our families favorites:

Cinnamon Raisin Cookies
Quinoa Almond Butter Blondies (although I used peanut butter...they were still delicious!)


Here are a few recipes from the book:

Black Bean Quinoa Chipotle Chili (page 184)

No one will ask, “Where’s the beef?” when sampling this incredibly delicious vegetarian dish. Simmering hearty black beans and quinoa with onions, garlic, herbs and spices creates a wonderfully complex chili that’s finished with fresh lime and topped off with tangy yogurt and an assortment of fresh flourishes.

Tip
If using the larger 19-oz (540 mL) cans of beans, you may want to add up to 1⁄2 cup (125 mL) vegetable broth or water to thin the chili.

Storage Tip
Store the cooled chili in an airtight container in the refrigerator for up to 2 days or in the freezer for up to 6 months. Thaw overnight in the refrigerator or in the microwave using the Defrost function. Warm chili in a medium saucepan over medium/low heat.

2 tsp vegetable oil 10 mL
2 cups chopped onions 500 mL
4 cloves garlic, minced 4
3 tbsp chili powder 45 mL
11⁄2 tbsp ground cumin 22 mL
2 tsp dried oregano 10 mL
11⁄2 tsp chipotle chile powder 7 mL
3 cans (each 14 to 19 oz/398 to 540 mL) 3
black beans, drained and rinsed
1 cup quinoa, rinsed 250 mL
1 can (28 oz/796 mL) crushed tomatoes 1
3 cups ready-to-use reduced-sodium vegetable 750 mL
or chicken broth (GF, if needed)
1 tbsp finely grated lime zest 15 mL
1⁄4 cup freshly squeezed lime juice 60 mL
Fine sea salt and freshly ground black pepper
1 cup plain Greek yogurt 250 mL
Suggested Accompaniments:
Fresh cilantro leaves
Chopped green onions
Chopped radishes
Crumbled queso fresco

1. In a large pot, heat oil over medium-high heat. Add onions and cook, stirring, for 6 to 8 minutes or until softened. Add garlic, chili powder, cumin, oregano and chipotle chile powder; cook, stirring, for 1 minute.
2. In a small bowl, coarsely mash one-third of the beans with a potato masher or fork. Stir mashed beans, whole beans, quinoa, tomatoes and broth into the pot. Bring to a boil. Reduce heat and simmer, stirring often, for about 30 minutes to blend the flavors. Stir in lime zest and lime juice. Season to taste with salt and pepper. Serve topped with yogurt and any of the suggested accompaniments, as desired.

Makes 8 servings

My twin 3 year old boys were asking for second helpings of the chili. It was a big hit at our house. It was also very filling, like the description above says, you won't even miss the meat!



Quinoa Almond Butter Blondies (page 482)

The brownie has legions of loyal fans, but the blondie has equally steadfast enthusiasts. The reasons are clearer than ever with this quinoa interpretation: a chewy, nutty butterscotch bar, enriched with cashew butter and highly transportable to boot.

Tip
Other natural nut or seed butters, such as peanut, almond or sunflower, or tahini, may be used in place of the cashew butter.

Storage Tip
Store the cooled blondies in an airtight container in the refrigerator for up to 5 days.

• Preheat oven to 350°F (180°C)
• 8-inch (20 cm) square metal baking pan, sprayed with nonstick cooking spray

11⁄4 cups quinoa flour 300 mL
1 tsp baking powder (GF, if needed) 5 mL
1⁄2 tsp fine sea salt 2 mL
1⁄2 cup unsweetened natural almond butter 125 mL
1⁄4 cup unsalted butter, softened 60 mL
1 cup natural cane sugar or packed light brown 250 mL
sugar
1⁄2 cup brown rice syrup or pure maple syrup 125 mL
2 large eggs
1 tsp vanilla extract (GF, if needed) 5 mL

1. In a medium bowl, whisk together quinoa flour, baking powder and salt.
2. In a large bowl, using an electric mixer on medium speed, beat almond butter and butter until fluffy. Beat in sugar and brown rice syrup until blended. Add eggs, one at a time, beating well after each addition. Beat in vanilla until smooth. Using a wooden spoon, stir in flour mixture until just blended.
3. Spread batter evenly in prepared pan.
4. Bake in preheated oven for 28 to 32 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached. Let cool completely in pan on a wire rack. Cut into 16 squares.

Makes 16 blondies

Vegan Gourmet/Vegenaise Product Review

Although I have not been actively posting about it the last few weeks, at the end of May, I decided that for June, I was going to go vegetarian. I come from a meat eating family and I have been eating meat my entire life, but I have always felt the pangs of guilt doing so and for some reason the last year or so, it has become almost impossible to take a bite. Anyway, I also know there are health benefits to cutting out meat, so that helped steer me in this direction. A few days ago, I was at my mom's house and all she had were meat based products to eat, so I thought, well I'll be a vegetarian at home and eat meat in social situations. It did not go over well. Not only did I feel gross eating meat, I felt sick for the entire next day. I have not had any meat other than that one time. What was supposed to be a month long project looks like it will turn into something more than that.

That is why I am so glad to have discovered Follow Your Heart's products. One that you have probably heard of is Vegenaise. It is a substitute for mayonnaise that is soy based and doesn't contain egg. You can use Vegenaise for many purposes such as for a salad dressing, a condiment for a sandwich or like I did to replace the oil in a muffin recipe. I found a recipe on VegWeb for Chocolate Muffins. The only thing I changed was using Vegenaise in place of the vegetable oil. These muffins turned out wonderful. My husband could not get enough of them! I made them without cupcake liners and just sprayed the muffin tin with cooking oil. The next time I attempt these, I will use liners, they were hard to get out of the pan and most fell apart, but they were still delicious. I think they would have stayed together better in paper liners. I did take a little taste of the Veganaise as I made the cupcakes and to my surprise it tasted pretty much exactly like mayo. I am thinking my next adventure with it will either be something like a tomato basil sandwich or maybe even a pea salad or something of that sort!




Follow Your Heart  has a line of products called "Vegan Gourmet." These include dairy replacements such a " block cheese," "sour cream," and "cream cheese." None of these actually contain dairy, but are meant to replace dairy products of the same nature. I used Vegan Gourmet cream cheese to make a  vegetarian version of  this mini pot pie that I really like. Instead of using chicken stock, I used vegetable stock. To make it quicker, I used frozen organic vegetables and to give it a creamy texture I used the cream cheese replacement. It is really simple, you just preheat the oven to 350, spray a muffin tin with cooking spray, place the egg roll wrappers in, boil the frozen veggies until cooked, drain the water, add the Vegan Gourmet cream cheese and 1 cup of vegetable stock (or not chicken stock, which tastes like chicken but is vegetable based- I will probably do this next time) Add some onion powder, garlic powder and tarragon to taste and then add a little bit of cornstarch to thicken the base. Boil that in the pan really quickly for about a minute, then spoon the mixture into the egg roll wrappers and put the tops down so it will make a little bundle. Bake in the oven for around 20 minutes and you have a tasty ALMOST vegan pot pie...if only I could find a vegan egg roll wrapper! Give it a try and come back and let me know what you think. This is a simple recipe with very few ingredients! Hope you enjoy! Even my husband said he couldn't tell it was vegetarian!
